The Pacific Madrona (Arbutus menziesii) is a beautiful and interesting native tree that grows all over the Pacific Northwest: on rocky slopes, coastal bluffs, and forest clearings. San Juan Island Sea Salt collects fallen branches and uses them to cold smoke their sea salt. This smoked salt has a hearty, smoked-salmon-like aroma and a soft brown caramel color.
